Sweet and Easy Banana Cake


¾ cup olive oil
¾ sugar
1-½ teaspoons  baking soda
¼ cup water or soy milk
1 ½ lbs ripe bananas, mashed
3 cups (375 g) unbleached all-purpose flour
1 teaspoon (6 g) salt
1 ½ teaspoons ( 7 ½ ml) vanilla
1 cup (220 g) chocolate chips
1 cup chopped walnuts

For the cocoa glaze (optional):

½ cup (60 g) powdered (confectioners’) sugar
2 tablespoons (10 g) cocoa
¼ tablespoon ( 1 ¼ ml) vanilla
2 tablespoons (30 ml) water


Preheat the oven to 350 F (180 C) Mix the baking powder and salt

Mix the oil and sugar until light and fluffy. Then add the bananas and mash them. Add flour and vanilla, mix thoroughly. Fold in the chocolate chips, along with the chopped walnuts.

Pour the batter into floured loaf pan and bake for 45 to 50 minutes.

To make the optional glaze, sift the sugar and cocoa together. Add the vanilla and water. Add more water if needed, Drizzle over cake.

Makes 1 cake
