Potato-Leek Soup

Another soup to keep you warm this holiday season.

Ingredients

  • 1 Tbsp olive oil
  • 2 cups diced onion
  • 2 leeks, thoroughly washed & sliced (white & light green parts only)
  • 3 cloves garlic, chopped
  • 4 medium potatoes, peeled and diced (4 cups)
  • 1 tsp dried thyme
  • 6 cups water
  • 3 Tbsp fresh lemon juice
  • Salt & Pepper to taste
  • 3 Tbsp parsley or chives for garnish

Directions

1. In a large pot, heat the olive oil over medium heat.

2. Add the onions and leeks, and cook until they are translucent.

3. Add the garlic and cook for 2 minutes.

4. Add the potatoes and thyme, cover everything with the water, bring to a boil and lower the heat, simmering until the potatoes soft, about 20 minutes.

5. Add lemon juice and puree with hand blender until smooth.

6. Season with salt and pepper, garnish with parsley to serve.

Notes: If you want a white soup, use only the white part of the leeks. Soup will be thick. Can thin down with water, adjust seasonings for extra water.
