Here’s a gooey treat for those with a real sweet tooth.
Peanut Butter Krispy Dudes from Kris Light
Ingredients
• corn syrup
• sugar
• peanut butter
• cinnamon
• vanilla
• Rice Krispies
Equipment
• Medium pot
• Wax paper
• rolling pin
• Cookie Cutter (large)
Directions
Melt on the stove equal parts of corn syrup and sugar (about 1/2 cup each works well). Once bubbling, remove from heat and stir in another equal part of peanut butter (smooth or chunky, your preference), a pinch of cinnamon and a tsp of vanilla. IMMEDIATELY stir in as much krispie cereal as you can fit in the pot, and stir to coat. Dump the caramelly-cookie-wad onto a wax paper covered counter or table (for easy clean up later). Roll it out with the rolling pin until you have a block about an inch or so thick (it doesn’t have to be perfect). Press out shapes with a cookie cutter (or just slice into squares). Cool and dive in!
