- 5 cups water
- ¼ cup soy sauce
- 1 medium onion, sliced
- 2 carrots, sliced
- 2 ribs celery, diced
- 1 cup of mushrooms, sliced (Shiitake work really well – but any kind will do)
- 1 pkg extra firm tofu, diced
- 1 cup corn kernels
- 2 cups chopped Chinese greens (e.g. bok choy, nappa, sliced cabbage, etc)
- 1 cup sugar snap or snow peas
- 1/3 cup rice vinegar (or apple cider vinegar – avoid white vinegar)
- 1 tsp (or more to taste) hot chili pepper flakes
- 2 cloves crushed fresh garlic
Directions
In a very LARGE pot, start heating water and soy sauce. Add veggies as you chop. Add the tofu. When veggies are tender, add the vinegar, chili pepper flakes and crushed garlic. Taste, adjust for seasonings (more vinegar and/or chili peppers for an extra kick.) This makes a LOT of soup – but can freeze leftovers.
Variation – add cooked whole wheat or brown rice noodles for a complete one-pot meal.
