Gajar Halwa (Carrot Pudding)



2lbs (1 kg) carrots
3 cups almond milk
¾ cup (185 g) fine granulated sugar
1-in (2 ½ -cm) cinnamon stick
1 tbsp olive oil
Seeds from 8 green cardamoms, crushed
3 tablesppons (45 g) almonds, blanched and chopped
1 ½ tablespoons (22 g) pistachio nuts, chopped


Peel and grate the carrots. Begin cooking the grated carrots with the almond milk and sugar on low heat. Add the cinnamon stick and cook until the milk has almost completely evaporated, which should take approximately 45 minutes.

In another saucepan, heat the olive oil. Add the carrots and fry, stirring continuously to prevent sticking.  Add 8 green cardamoms, crushed. This will take around 15-20 minutes.

Spread the mixture in a flat dish and fold in the chopped nuts. Garnish with additional chopped nuts before serving. Serve hot, warm or cold
