This ancient grain is densely nutritious, wonderful for baking bread and desserts and is said to help prevent heart disease, migraines and type II diabetes.

Nutritional Benefits: Not only is spelt great tasting but it is highly nutritious! It contains lots of protein, fibre, complex carbohydrates and b vitamins. It is also easier to digest than most wheats.

Tips and Tricks: Spelt is more water soluble than most wheats, so when using spelt flour in baking it isn’t necessary to use as much liquid. Try using half as much as usual and add more to your liking. A good tip when baking bread is to replace some spelt flour with white flour. This will make a lighter, fluffier bread that is still dense in nutrients.
