Amelia Eats – Apple Cranberry Spinach Salad with Lemony Maple Dressing


A veritable Canadiana of ingredients – get your greens, your reds, and your browns.

Apple Cranberry Spinach Salad with a Lemony Maple Dressing
Makes 6 servings

Dressing Ingredients

  • 1/4 cup extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • 1 clove garlic pureed
  • 1/4 cup fresh lemon juice
  • 1 tbsp maple syrup
  • 1/4 tsp salt
  • fresh ground pepper to taste

Directions
Combine in a mason jar and shake. Use as needed.

Salad Ingredients

  • 2 large gala apples thinly sliced
  • 1 bunch of spinach (approximately 7 cups)
  • 1/2 cup toasted walnuts
  • 1 large carrot grated
  • 1/4 medium red onion thinly sliced
  • 1/4 cup dried cranberries

Garnish

  • dried cranberries
  • toasted walnuts

Directions
Mix all ingredients in a bowl. Top with dressing and toss. Top with garnish and serve it up!
