Amelia Eats – Orange Rhubarb & Ginger Crisp

This zesty dessert is sure to please family, friends and your freezer. Makes five servings – is that going to be enough?

Orange Rhubarb & Ginger Crisp
Makes 5 servings

Ingredients

  • 3 cups rhubarb, trimmed, cut in 1/2-inch dice
  • 2 tsp orange zest
  • 1 tbsp grated ginger
  • 1/4 cup brown sugar
  • 1/2 tsp ground cinnamon

Topping

  • 1/4 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/4 cup agave nectar or maple syrup
  • 2 tbsp vegetable oil

Garnish

  • Vanilla soy ice cream
  • Orange slices

Directions

  1. Preheat oven to 375 F
  2. In large bowl, toss rhubarb, zest, ginger, brown sugar, and cinnamon. Transfer to lightly greased 8 x 8-inch baking pan.
  3. For topping, toss together oats, flour, agave and oil. Drizzle in oil. Mix well with fork. Sprinkle over rhubarb mixture.
  4. Bake in preheated 375F oven until golden brown, about 45 minutes.
  5. Serve it up with some vanilla soy ice cream and orange slices!
