This zesty dessert is sure to please family, friends and your freezer. Makes five servings – is that going to be enough?
Orange Rhubarb & Ginger Crisp
Makes 5 servings
Ingredients
- 3 cups rhubarb, trimmed, cut in 1/2-inch dice
- 2 tsp orange zest
- 1 tbsp grated ginger
- 1/4 cup brown sugar
- 1/2 tsp ground cinnamon
Topping
- 1/4 cup whole wheat flour
- 1/2 cup rolled oats
- 1/4 cup agave nectar or maple syrup
- 2 tbsp vegetable oil
Garnish
- Vanilla soy ice cream
- Orange slices
Directions
- Preheat oven to 375 F
- In large bowl, toss rhubarb, zest, ginger, brown sugar, and cinnamon. Transfer to lightly greased 8 x 8-inch baking pan.
- For topping, toss together oats, flour, agave and oil. Drizzle in oil. Mix well with fork. Sprinkle over rhubarb mixture.
- Bake in preheated 375F oven until golden brown, about 45 minutes.
- Serve it up with some vanilla soy ice cream and orange slices!
