Amelia Eats – Apple Cranberry Spinach Salad with a Maple and Lemon Dressing


Ingredients – Serves 6.

Dressing

  • 1/4 cup extra virgin olive oil
  • 1 tbsp Apple cider vinegar
  • 1 clove garlic pureed
  • 1/4 cup fresh lemon juice
  • 1 tbsp maple syrup
  • 1/4 tsp salt
  • Fresh ground pepper to taste


Directions

  • Combine in a mason jar and shake.  Use as needed.

Ingredients

  • Salad:
  • 2 large gala apples thinly sliced
  • 1 bunch of Spinach (approximately 7 cups)
  • 1/2 cup Toasted Walnuts
  • 1 large Carrot grated
  • 1/4 medium red onion thinly sliced
  • 1/4 cup dried cranberries

Garnish

  • Dried cranberries
  • Toasted walnut
  • Lemon zest

Directions

  • Mix all ingredients in a bowl.  Top with dressing and toss.  Top with garnish and serve it up!

  • Salad tongs
  • Mason jar
  • Microplane
