

Ingredients – Serves 6.
Dressing
- 1/4 cup extra virgin olive oil
- 1 tbsp Apple cider vinegar
- 1 clove garlic pureed
- 1/4 cup fresh lemon juice
- 1 tbsp maple syrup
- 1/4 tsp salt
- Fresh ground pepper to taste
Directions
- Combine in a mason jar and shake. Use as needed.
Ingredients
- Salad:
- 2 large gala apples thinly sliced
- 1 bunch of Spinach (approximately 7 cups)
- 1/2 cup Toasted Walnuts
- 1 large Carrot grated
- 1/4 medium red onion thinly sliced
- 1/4 cup dried cranberries
Garnish
- Dried cranberries
- Toasted walnut
- Lemon zest
Directions
- Mix all ingredients in a bowl. Top with dressing and toss. Top with garnish and serve it up!
